Rajma Masala

Rajma is a popular Punjabi dish of kidney beans, traditionally prepared with red kidney beans cooked in a spicy sauce. Rajma is usually eaten with steamed rice and bhaturas or rotis.

One of the most common ways to prepare this dish is by cooking the kidney beans in a sauce made from tomatoes, onions, garlic, ginger, coriander powder, red chili powder and garam masala. This may be served as it is or can be served as a gravy over steamed rice.

  • 1 cup rajma soaked overnight
  • 2 onions
  • 4 tomatoes
  • 1 inch ginger
  • 8 garlic cloves
  • 2 tbsp refine oil
  • 1 tbsp butter
  • Coriander leaves
Whole spices:
  • Bayleaf (tej patta)
  • Cloves – Cinnamon
  • Black cardamom
  • Cumin seeds
Spice mix:
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp roasted cumin powder
  • 1 tsp mango powder
  • 1 tsp red chilli powder
  • 1 tsp salt
  • 1/2 tsp garam masala


Step 1: Pressure cook the dal till it is delicate and keep it to the side.

Step 2: Add butter in a pan. Add cumin seeds, ginger, garlic and onions

Step 3: Saute the onions till they are brownish in colour and add turmeric powder, stew powder, cumin powder, coriander powder and garam masala

Step 4: Blend well and add the tomato puree and cook it for around 7 minutes

Step 5: Add the cooked rajma beans and add some water. Then add amchur powder. Close and cook for around 10 minutes

Step 6: Add a teaspoon of sugar to adjust the flavors lastly add kasuri methi

Step 7: Rajma masala is fit to be served hot with some Jeera Rice or Ghee Rice
