Hyderabadi Chicken Biryani

Hyderabadi biryani, also known as Hyderabadi dum biryani, is a style of biryani from Hyderabad, India made with basmati rice and goat meat and cooked with the dum pukht method. Originating in the kitchens of the Nizam of Hyderabad, it combines elements of Hyderabadi and Mughlai cuisines. Hyderabad biryani is a key dish in Hyderabadi cuisine.

Ingredients:

3 cup basmati rice washed and soaked for 30 mins (1 cup = 25-0 ml)
Whole spices for Rice:
1 cinnamon stick
4 green cardamom
1 black cardamom
1 bay leaf
5 peppercorn
5 cloves
1 tsp edible rose water
2 tsp salt
1 tbsp oil

For Gravy:
3 tbsp ginger garlic paste
1 tsp roasted jeera powder
2 tsp garam masala
3 tsp coriander powder
1/2 tsp black pepper powder
3 tsp red chilly powder
2 tsp salt
3 tbsp oil/ghee
1 cup fried onions or birista
1 cup milk soaked with saffron
1 cup curd
1 lemon juice
coriander/mint leaves for garnishing
